    Tartar Sauce Finely Dice The Shallots, Capers, Gherkins And The Garlic. Blend Them With Ketchup, Wholegrain Mustard, Soy Sauce, Sweet Soy Sauce, Sesame Oil And Roasted Cilantro Seeds. Season To Taste With Salt And Freshly Ground Black Pepper.

  • Step 2

    Beef Cut The Beef Tenderloin In Small Cubes (approximately 5 X 5 Millimeters). Combine The Beef And The Tartar Sauce And Mix Well.

  • Step 3

    Chili Mayonnaise Separate The Yolk From One Of The Eggs. Stirring Rapidly With A Whisk, Add The Chili Oil And The Sunflower Oil To The Yolk - First Drop By Drop, Later Pouring The Oil Slowly. Season With Juice Of Half A Lemon And Season With Salt.

    Red Seaweed Soak The Dried Red Seaweed In Iced Water For About 5 Minutes Until Soft. Drain And Dry On A Kitchen Towel.

  • Step 5

    Serve The Beef Tartar Together With A Fresh Raw Egg Yolk, The Chili Mayonnaise, The Red Seaweed, Fresh Cilantro Leaves And A Crunchy, Freshly Baked Dark Bread.
