Recipes I like to cook
I was born in Dehradun. After finishing my schooling, I enrolled for a hotel management course at IHM Chennai. Starting my career in 2000, and having worked with several major brands of hotels, I have travelled the length and breadth of the country.

Probably when you have been leafing through magazines and seen some of my interviews. I am also an occasional recipe contributor to dailies.
Can you describe your cooking in 3 words ?
Methodical, rustic, thoughtful.
Who/What has been the biggest influence on you cooking ?
Chef Vijay Nagpal influenced me in shaping my views about the importance of keeping close to the basics. Later on, during my days as a sous chef, Chef Deepak Bhatia encouraged me to develop an unhindered approach in carving out my style of cooking.
Why a chef ?
Helping my mother in the kitchen used to be my favorite ploy to keep away from studies. Then, as I neared the end of my schooling, my parents encouraged me to take up this profession.
What do you cook yourself when you get home ?
It is usually a meal in bowl, kind of comfort food, though, on evenings before my day off, it is my children who decide the menu.
What makes a great dish ?
Love, dedication, use of the right ingredients, and a hungry patron.
What is your favourite music to cook to ?
I was reared on the music of the 80’s. Therefore, it is always fun cooking to some good rock music. Amongst the contemporaries, I like listening to Porcupine Tree.
Who is at home ?
My better half, plus a son and daughter.

What is your advice for budding chefs or even enthusiastic home cook
Proactively gather feedback, whether positive or negative. You get bouquets or brickbats, and it is important to take them constructively, never give up. Cook your best and be proud of what you do.
