This is Amol’s second tenure with Hyatt Hotels as he was previously associated with Grand Hyatt Mumbai where he served for 6 years and Hyatt Regency Mumbai for 2 years before he moved on to Radisson Blu Pune

Who/What has been the biggest influence on you cooking ?
I have had some great mentors in my life who have always taught me the little tricks to improve myself and improvise on each dish prepared
Why a chef ?
I have always had an interest in cooking and when hotel management came up as a career option, I was delightde to indulge myself in exploring the scope of this very dynamic field
What do you cook yourself when you get home ?
I love cooking food for my daughters. Whether its Mac n Cheese or Pizza, I cook what they want me to at home
What makes a great dish ?
Knowledge about each ingredient, knowledge about the different techniques and knowledge about guest's preference is what makes a great dish
