Kuku Wakupaka

This dish is mostly prepared at the East African coast especially Zanzibar where coconuts are in plenty and are used to prepare most of the dishes.

  • 4 Servings

  • Step 1

In a pot add the chicken with ginger, garlic, salt and a little bit of chicken stock. Bring the pot to a boil but don’t fully cook the chicken. Reserve it.

  • Step 2

In a separate pot, add the oil and place on a medium heat stove. Add onion and cook till soft. Add the crushed tomato and continue cooking. Then add the curry powder, chili flakes and lemon juice and continue cooking.

  • Step 3

Add the chicken without the broth from the chicken. Remember the chicken is not fully cooked, at this point, if desired, add a little bit of the broth to finish cooking the chicken, but keep in mind you need a thick sauce.

  • Step 4

Finally add the coconut milk and turn the stove to low. Continue cooking for a few minutes then turn off the stove. Now add the chopped coriander.

  • Step 5

Served as presented picture. Chakula chema!
