Some of the great chefs I have worked with namely, Thierry Buffeteau, Ivan Musoni and Joshua Duncan; the underrated creativity and ingenuity of the peasant cuisine; the books of Alain Chapel, MFK Fisher and Nina Horta
It was an accident. I wanted to work in literature and theater. Being a chef was meant to be temporary, a source of income until I had the chance to dedicate myself to these areas. It was not an easy path, but over time I learnt to love the work
Bread, butter and anchovy
I am not sure there is a rule, but the care (with the product, with the technique), and a certain amount of knowledge and audacity never hurts when creating a dish
I love the sound of a busy kitchen, but if I had to choose one it would be jazz. My father was a Brazilian jazz musician and it is the music I love. Jazz with an element of risk and unpredictability, that love of craftsmanship and creativity
