A Scotch egg is a typical English appetizer consisting of a hard or soft-boiled egg wrapped in meat, coated in bread crumbs and baked or deep-fried. Sam’s revisited version of the Scotch Egg features crab meat instead of the usual sausage meat.
Start by picking your white crab meat no bones. Put the brown crab meat through the mule. Boil the burford egg for 7 minutes. Finely chop the herbs and mix with the crab meat. Add the egg yolk and breadcrumbs. Weigh out 65g of mix and wrap it round the boiled egg. Then wrap the flour, egg yolk and breadcrumb around the egg.
