This Dish Is Mostly Prepared At The East African Coast Especially Zanzibar Where Coconuts Are In Plenty And Are Used To Prepare Most Of The Dishes.
In A Pot Add The Chicken With Ginger, Garlic, Salt And A Little Bit Of Chicken Stock. Bring The Pot To A Boil But Don’t Fully Cook The Chicken. Reserve It.
In A Separate Pot, Add The Oil And Place On A Medium Heat Stove. Add Onion And Cook Till Soft. Add The Crushed Tomato And Continue Cooking. Then Add The Curry Powder, Chili Flakes And Lemon Juice And Continue Cooking.
Add The Chicken Without The Broth From The Chicken. Remember The Chicken Is Not Fully Cooked, At This Point, If Desired, Add A Little Bit Of The Broth To Finish Cooking The Chicken, But Keep In Mind You Need A Thick Sauce.
Finally Add The Coconut Milk And Turn The Stove To Low. Continue Cooking For A Few Minutes Then Turn Off The Stove. Now Add The Chopped Coriander.
