Soak the chickpeas overnight in water, by putting them in a larger vessel
In a food processor, combine the soaked and drained chickpeas, onion, coriander, garlic, chilies, salt, pepper and cumin. Process until smooth, about 1 minute.
Using your hands, scoop out about 2 tablespoons of the mixture at a time. Shape the falafel into small patties, about 2 inches wide and ½ inch thick. Place each falafel on the oiled pan.
Carefully flip the falafels halfway until they are golden brown on both sides. Season with white sesame seeds.
Serve alongside tahini sauce, pita bread and chopped lettuce leaves.
