The evening begins with a welcome aperitif and fresh oysters, followed by a refined selection of appetisers such as fresh salads, delicate terrines and elegant tartares. Citrus-infused ravioli filled with Pag Island skuta and herbs lead into turbot with clams, cauliflower, buttermilk and crispy capers. The main course features duck breast with salsify, morels and a rich dark braise, while the celebration concludes with signature desserts, handmade sorbets and seasonal fruits.
