Chef Surachai joined a 4 star property in Phuket right after his culinary course. Originally from Phang-nga, a province of South Thailand, he has worked around the country and in Dubai before taking up his current role in Grand Hyatt Kochi Bolgatty.

Can you describe your cooking in 3 words ?
Always from heart.
Who/What has been the biggest influence on you cooking ?
My mother. As my mother needed help in the kitchen, I used to do the small chores for her. That is how I got interested in cooking.
Why a chef ?
I believe food can make everyone happy and I became a Chef to make people happy through my food.
What do you cook yourself when you get home ?
It depends on what is available with me and what is in season. I make something very simple like mushroom curry, fried fish or some rice porridge with fish.
What makes a great dish ?
I believe that every dish would be perfect if the ingredients are fresh. Second thing which makes a good dish is following the authentic recipe.
What is your favourite music to cook to ?
Pop and contemporary
Who is at home ?
My father, mother and sister.
Tell us something we might not know about you.
I like Photography. I like doing quick research on local cuisines wherever I go be it in India or outside, I always go to local markets and see what they have.
What is your advice for budding chefs or even enthusiastic home cook
Basics are very important. Once base is set you can learn or cook anything. Start with fresh ingredients; a chef should be able to identify the good ingredient from the bad ones. Also, Chefs should be healthy and work in a safe environment.
